Directions:
1. Mix all the ingredients, except water, in a bowl. Pack into a quart-size, wide-mouth mason jar.
2. Place Kraut Source onto the jar. Allow to ferment for 4 - 5 days in a cool spot, away from direct sunlight. Check every few days that there is water in the moat, and top off as needed.
3. When ready, replace Kraut Source with the standard mason jar lid and ring. Transfer to the refrigerator.
*Use only Fuyu persimmon, NOT Hachiya, as the latter is not ready to eat until it is very soft.
**Whey can easily be made by straining yogurt. Watch this video to see how.
This relish pairs beautifully with roasted turkey or ham, and it's a healthy, probiotic-rich substitute for standard cranberry relish recipes that are full of sugar.
Happy Fermenting!

Can whey from a non-dairy yogurt be used?
@Samantha Hathaway: You can leave out the whey, but due to the short fermentation period, probiotics may not develop without the help of the whey. You can use a probiotic capsule if you’re not able to do whey.
Just wondering if the whey can be left out of this recipe? Thanks.
@JENN: filtered water is pour into the jar before you install Kraut Source. The moat just needs regular tap water.
Thank you,
Kraut Source
To confirm the filtered water is poured over the top of the mixture before putting the Kraut source device on the jar? As well as in the moat?
@LOREN: The added water is plain filtered water.
Thank you,
Kraut Source
So the water added is plain and not a brine?

@CARISSA: You’ll have to find out what strains of bacteria is in the non-dairy whey. If there’s no lactobacilli, the ferment won’t be true lacto-fermentation. If you need to use non-dairy, perhaps just try with a small amount first. And you can also use probiotic capsule.
